I cant turn x ray on in gotv. You can change the display mode that determines how maya draws all geometric objects in a view panel.
However you can set the options in the shading menu in one view panel as you like then choose shading apply current to all to apply the settings from the current view panel to all other view panels.

Your own keybinds for these functions are usually displayed below the scoreboard or somewhere else on screen its been a while.
If x ray mode is switched off then transparent gridlines hidden by objects will not be displayed.

There are 2 kinds of xray the long one with the fly of the bullet and the short hit one.
To toggle x ray mode click view tab grids levels panel grids tool launcher.
If you at least leave the short one enabled it whill show you exactly where you hit and you can correct your shots acordingly if you play without aim assist.
